I know I said our condiments are easy to preserve, but in order to achieve this, you must play by some rules. In an explicit manner, I would highlight some types of condiments and ways of preserving them.
- Dairy condiment
Any condiment containing dairy products, like sour cream, is best preserved in the fridge.
- Condiments with a lot of acidity
Thanks to the amounts of salt and sugar that make up condiments like ketchup and mustard, they are safe to store at room temperature. The only instance in which you have to store them in the refrigerator is if you have purchased a reduced-sugar or low-salt version.
- Salad dressing
If this condiment has no dairy, eggs, or fresh vegetables in it, room temperature is just fine for preservation.
- Olive oil and honey
I would not want to start with “as your chef,” but, as your chef, do you know that you run the risk of destroying these ingredients if you refrigerate them? Here’s the gist: If they are refrigerated, honey can crystallize and dry out, and olive oil will solidify and lose its flavour.
- Ogbono (Seed)
Ogbono not stored appropriately for too long begins to smell like soap when cooked. To avoid this, store ogbono seeds in an airtight container in the fridge or freezer; alternatively, store the seeds in ziploc or freezer bags in the fridge.
- Ogbono (Blended)
To preserve blended ogbono, place it in a closed-fitted container with salt and in a dry, cool place. After drying, use red pepper to cover the entire surface. Upon locking the container, place it in the freezer or fridge.
- Crayfish
Store blended crayfish in a container and place it in the refrigerator (where you have constant electricity). If electricity is not stable where you reside, store blended crayfish in a bag and place it on a wooden slab.
These preservative methods are easy and pocket-friendly DIYs that one can do in the comfort of their homes.
