Permit me to say that the belief that soups are cooked in pots is only a myth. Do not think me funny, but I strongly believe that soups and every other meal are first cooked in our minds.
As your personal chef, I, ChefOda, would like to paint an image of how I prepare my ogbono soup. I start this tedious yet amazing experience in my mind, not necessarily in the kitchen or when I have access to a pot.
Aside from a creative mind, some ingredients are definitely needed in preparing our ogbono soup. Below are the ingredients:
- Daarhoda blended ogbono
- Cooking palm oils
- Ugu leaves
- Efirin/basil leaves
- Assorted meats
- Daarhoda whole dried crayfish
- Daarhoda whole dried prawn
- Daarhoda ground red pepper
- Daarhoda Cameroon pepper
- Dried stock
- Smocked catfish
- Red chopped onion
- Scotch bonnet (Ata rodo)
- Cayenne pepper (Atagungun)
- Seasoning cubes
- Iru
- Salt to taste.
PREPARATION
- Pick and thoroughly rinse ugu leaves in hot water? (Be careful not to leave the leaves in for too long.)
- Soak dry basil leaves in hot water for about 5 minutes.
- Thoroughly wash the meat.
- Put already washed tougher meats, salt to taste, and sliced onion into a pot and leave it on medium heat to simmer.
- Turn up the heat to medium after 20 minutes and add more water to cover the meat; cook till it is tender.
- When tender, add stockfish.
- Put in the chopped catfish when the meat is cooked through.
- After 7-8 minutes, add Daarhoda Cameroon pepper, Daarhoda ground pepper, iru, Daarhoda whole dried crayfish, Daarhoda whole dried prawn, scotch bonnet, cayenne pepper, seasoning, and salt to taste.
- After 3-5 minutes, add the palm oil and leave it to melt.
- Begin to gradually add Daarhoda blended ogbono and stir to fully dissolve, then leave for 15 minutes.
- Go in and stir occasionally.
- Add washed ugu and basil leaves, stir, and turn the heat low.
- Leave it to cook for 3-5 minutes and turn off the gas.
