AFRICA AND HER INDIGENOUS CONDIMENTS

Africa is a great continent with renowned cultural diversity and mouthwatering cuisine and recipes.

Africa is a continent blessed with natural resources, unique landscapes, ancient history, geographical wonders, active adventures, and natural food seasonings, to mention a few. For instance, there are areas in western Kenya where extracted reed salts from aquatic plants are produced.

Africa is home to various seasonings. Piments ecrasés is a traditional Mauritius condiment; Duqqa is an Egyptian blend of herbs, toasted nuts, and spices; Harissa, a spicy red pepper paste found in North Africa; Chermoula is a sauce used as both a marinade and a condiment; fermented locust beans, popularly known as Iru, are gotten from the pods of the African locust tree and used in making traditional soups; and Sumbala is a unique seasoning and condiment made from fermented seeds. It is added to soups and stews for a strong umami flavour. I see our cultural dishes and condiments are making you salivate, and as your beloved chef, I would draw the curtain on my list before you fantasize any deeper.

One exciting fact I would like to share with you is that African condiments can be used as both condiments and baking ingredients. I know I promised to be nice and not make you salivate, but hey, I have to do my job and enlighten you. Let us use the melon seeds, for instance. The melon seed is popularly known as a condiment in making Egusi soup. Are you aware that this is also an ingredient in making delicious sweets and snacks? Also, the seeds can be used as mouth fresheners when mixed with nuts and spices. Not only is the seed nutritious for the body, but its hard flesh is also. The hard flesh is used as a flour seasoning in the making of exotic loaves of bread, while the white seeds are fried in various types of cakes. As your chef with your best interests at heart, permit me to inform you that the lemon seed can also be used in preparing cereals and fruit puddings for children. With lemon seed, no one is exempt from enjoying its nutritional benefits.

With this highlighted information, I am sure you are considering ordering all of Daarhoda’s condiments. The good news is that I ChefOda, am more than able to cater to your demands. The big question now is, “How can I preserve my condiments?”
